Human is tied with Orc for the most common race in Iron Soul: Dungeon at a published 25.40%, which makes it the joint first of 13 by draw rate. It is also the simplest entry on the whole table: one bonus line where every other race has two to seven. That line is Attack Bonus, 5% at one star, 7% at two and 10% at three. A 25.40% rate means a Human draw averages 3.9 rerolls, three rerolls give you better than even odds, and eight rerolls put failure under 10%. Getting it to the three star ceiling means landing the same draw three times, which averages 12 rerolls in total. The one line Human gives, and what it does
Human is the only race on the table with a single bonus line. At one star it is Attack Bonus 5%, at two stars 7% and at three stars 10%. By draw rate, Human is joint first with Orc at 25.40%, ahead of Goblin at 24.50% and far ahead of Undead at 13.00%. The three commons together are 75.30% of the live pool, so three rerolls in four land here. That abundance is the point: Human costs 3.9 rerolls on average against 500 for any of the three 0.20% mythicals, a difference of 128 times. Orc is the direct comparison, because it carries the identical Attack Bonus line at the identical rate and adds Health Bonus 10% to 20% on top. If you draw both, there is no argument for keeping Human over Orc at the same star level.
